Harsh, yet forgiving, the cuisine in BAGRI relies only on locally produced, high quality seasonal products – from pastured animals of the best small stock-breeding kennels, organic and naturally grown vegetables and extra virgin oils to the fines of salt crystals from the natural reserve of “Atanasovsko ezero”.
Traditional, world and author recipes make a perfect blend in a variety of menus, depending on the season. Bulgarian artisanal beers, wine and grapas offer the nicest addition to our food choices, served in a warm and cosy atmosphere.
In close partnership with the Slow Food network, we are keeping the forgiving techniques used for preparing the dishes. Creating a dish with local and seasonal products is a long lost art, and we аre the only restaurant in Sofia that’s being so precise.
